Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 1 cup cooked rice
- 1 cup black beans, drained
- 1/2 cup shredded cheese
- 4 large flour tortillas
- 1/2 cup salsa
- 1/4 cup sour cream
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken with salt, pepper, cumin, and paprika.
- Cook chicken for 6-7 minutes per side until fully done.
- Slice chicken into thin strips.
- Warm tortillas in a dry pan for 30 seconds.
- Layer rice, beans, chicken, cheese, salsa, and sour cream on each tortilla.
- Fold the sides and roll tightly into a burrito.
- Serve warm.

- Use leftover rotisserie chicken for quicker prep.
