Description

Chicken fajitas are a flavorful and easy-to-make dish. They feature marinated chicken, bell peppers, and onions cooked together and served with warm tortillas.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, sliced into strips
  • 2 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small flour tortillas
  • Fresh cilantro for garnish
  • Sour cream, salsa, and guacamole for serving (optional)


Instructions

  1. In a bowl, mix olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and black pepper.
  2. Add chicken strips to the marinade and coat well. Let sit for 15 minutes.
  3. Heat a large skillet over medium-high heat. Add marinated chicken and cook for 5-6 minutes until browned.
  4. Add bell peppers and onions to the skillet. Cook for another 5-6 minutes until vegetables soften.
  5. Warm tortillas in a dry skillet or microwave for 20 seconds.
  6. Serve chicken and vegetable mixture on tortillas. Garnish with cilantro, sour cream, salsa, or guacamole if desired.

  • For extra flavor, marinate the chicken for up to 2 hours.
  • Use gluten-free tortillas if needed.
