Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 lb chicken breast, cubed
- 6 cups chicken broth
- 2 cups water
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 cups egg noodles
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and chicken. Cook until chicken is no longer pink.
- Pour in chicken broth and water. Bring to a boil.
- Season with salt, pepper, and thyme.
- Add egg noodles and cook for 8-10 minutes.
- Garnish with fresh parsley before serving.
