Description
A refreshing and easy-to-make chicken pasta salad perfect for picnics or quick lunches.
Ingredients
- 2 cups cooked chicken, diced
- 8 oz pasta, cooked and cooled
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine chicken, pasta, tomatoes, cucumber, and red onion.
- In a small bowl, mix mayonnaise, lemon juice, dried basil, salt, and pepper.
- Pour dressing over the salad and toss to coat.
- Refrigerate for at least 30 minutes before serving.
Notes
- Use rotisserie chicken for a quicker option.
- Add olives or feta cheese for extra flavor.
- Store in the fridge for up to 3 days.
