A simple and delicious chicken taco casserole that combines tender chicken, flavorful spices, and melted cheese for a comforting meal.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F.
- In a bowl, mix chicken, black beans, corn, salsa, and taco seasoning.
- Spread mixture in a greased baking dish.
- Sprinkle shredded cheese evenly on top.
- Bake for 20 minutes or until cheese is melted.
- Remove from oven and top with crushed tortilla chips.
- Serve with sour cream and cilantro.
