Ingredients
- 2 cups carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt to taste
- 1 tbsp olive oil
- 2 corn tortillas, cut into strips
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add carrots and spices, cook for 2 minutes.
- Pour in vegetable broth, bring to a boil, then simmer for 15 minutes.
- Blend the soup until smooth.
- Fry tortilla strips until crispy.
- Serve soup topped with tortilla strips and cilantro.
