A healthy and flavorful Cajun chicken salad with creamy guacamole that’s easy to prepare and packed with protein.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 2 ripe avocados
- 1 lime, juiced
- 1/4 cup red onion, diced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 4 cups mixed greens
- Salt and pepper to taste
Instructions
- Season chicken breasts with Cajun seasoning.
- Heat olive oil in a pan and cook chicken for 6-7 minutes per side until fully cooked.
- Slice cooked chicken into strips.
- In a bowl, mash avocados and mix with lime juice, red onion, and cilantro to make guacamole.
- Toss mixed greens with cherry tomatoes.
- Top greens with sliced chicken and a generous scoop of guacamole.
- Season with salt and pepper to taste.
Notes
- Use store-bought Cajun seasoning or make your own with paprika, garlic powder, and cayenne.
- Let chicken rest for 5 minutes before slicing to retain juices.
- For extra spice, add jalapeños to the guacamole.
