Ingredients
- 1 lb lean ground beef
- 2 large onions, thinly sliced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 8 small whole wheat tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup plain Greek yogurt
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and cook, stirring occasionally, until caramelized (about 15 minutes).
- Add ground beef, salt, pepper, cumin, and paprika. Cook until beef is browned (about 8 minutes).
- Warm tortillas according to package instructions.
- Assemble tacos with beef mixture, lettuce, tomatoes, cilantro, and a dollop of Greek yogurt.
- Serve with lime wedges on the side.
Notes
- Use a non-stick skillet for easier caramelization.
- For extra flavor, add a pinch of chili powder to the beef.
