Description
A flavorful and healthy Caribbean-inspired pot roast made in a crockpot. This dish is packed with spices and tender meat, perfect for a hearty meal.
Ingredients
- 2 lbs beef chuck roast
- 1 tbsp olive oil
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 1 cup carrots, sliced
- 1 cup sweet potatoes, cubed
- 1 cup low-sodium beef broth
- 1 tbsp Caribbean jerk seasoning
- 1 tsp thyme
- 1 tsp allspice
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
- Place the seared roast in the crockpot.
- Add onion, garlic, bell pepper, carrots, and sweet potatoes around the roast.
- In a bowl, mix beef broth, jerk seasoning, thyme, allspice, black pepper, and salt. Pour over the roast and vegetables.
- Cover and cook on low for 8 hours or high for 4-5 hours, until the meat is tender.
- Shred the meat with a fork and serve with the vegetables and juices.
Notes
- For extra heat, add a chopped Scotch bonnet pepper.
- Serve over rice or with a side of plantains.
- Leftovers can be stored in the fridge for up to 3 days.
