Description

A healthy twist on classic chicken parmesan, this crockpot stew is easy to make and packed with flavor.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1/2 cup low-fat mozzarella cheese, shredded
  • 1/4 cup grated parmesan cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 tsp salt


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add marinara sauce, diced tomatoes, onions, garlic powder, basil, oregano, black pepper, and salt.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Shred the chicken with two forks.
  5. Sprinkle mozzarella and parmesan cheese on top.
  6. Cover and cook for an additional 10 minutes until cheese melts.
  7. Serve warm.
