Description
A healthy twist on classic chicken parmesan, this crockpot stew is easy to make and packed with flavor.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup marinara sauce
- 1/2 cup low-fat mozzarella cheese, shredded
- 1/4 cup grated parmesan cheese
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1 tsp garlic powder
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Place chicken breasts in the crockpot.
- Add marinara sauce, diced tomatoes, onions, garlic powder, basil, oregano, black pepper, and salt.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred the chicken with two forks.
- Sprinkle mozzarella and parmesan cheese on top.
- Cover and cook for an additional 10 minutes until cheese melts.
- Serve warm.
Notes
- Use fresh herbs if available.
- Add spinach or zucchini for extra vegetables.
- Store leftovers in an airtight container for up to 3 days.
