Description
A healthy crockpot version of the popular Marry Me Chicken dish. Tender chicken in a creamy sauce with sun-dried tomatoes and herbs.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- 1/2 cup low-sodium chicken broth
- 1/2 cup low-fat cream cheese
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place chicken breasts in the crockpot.
- Add sun-dried tomatoes, garlic, oregano, basil, and red pepper flakes.
- Pour chicken broth over the chicken.
- Cook on low for 4-5 hours or until chicken is tender.
- Shred chicken slightly with two forks.
- Stir in cream cheese and parmesan until smooth.
- Season with salt and pepper.
- Garnish with fresh basil before serving.
Notes
- For extra flavor, use sun-dried tomatoes packed in oil.
- Serve over whole wheat pasta or cauliflower rice.
- Store leftovers in the fridge for up to 3 days.
