Description

A healthy crockpot version of the popular Marry Me Chicken dish. Tender chicken in a creamy sauce with sun-dried tomatoes and herbs.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup low-fat cream cheese
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add sun-dried tomatoes, garlic, oregano, basil, and red pepper flakes.
  3. Pour chicken broth over the chicken.
  4. Cook on low for 4-5 hours or until chicken is tender.
  5. Shred chicken slightly with two forks.
  6. Stir in cream cheese and parmesan until smooth.
  7. Season with salt and pepper.
  8. Garnish with fresh basil before serving.

Notes

  • For extra flavor, use sun-dried tomatoes packed in oil.
  • Serve over whole wheat pasta or cauliflower rice.
