Description
A simple and healthy turkey dinner made in the crockpot. Perfect for busy weeknights with minimal prep.
Ingredients
- 1.5 lbs boneless turkey breast
- 1 cup low-sodium chicken broth
- 2 cups baby carrots
- 1 cup diced celery
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sear the turkey breast for 2-3 minutes per side.
- Place carrots, celery, onion, and garlic in the crockpot.
- Add the seared turkey breast on top of the vegetables.
- Pour chicken broth over the turkey and vegetables.
- Sprinkle thyme, rosemary, and black pepper evenly.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Remove the turkey, slice, and serve with the vegetables and broth.
Notes
- Use fresh herbs if available for better flavor.
- Check the turkey’s internal temperature—it should reach 165°F.
- Leftovers can be stored in the fridge for up to 3 days.
