Ingredients
- 1 cup pumpkin puree
- 1 can black beans, drained and rinsed
- 1 cup enchilada sauce
- 1 cup cooked quinoa
- 1/2 cup diced red bell pepper
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- 1 lime, juiced
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt to taste
Instructions
- Cook quinoa according to package instructions.
- In a bowl, mix pumpkin puree, black beans, enchilada sauce, cumin, and chili powder.
- Heat the mixture in a pan over medium heat for 5 minutes.
- Layer quinoa, pumpkin-bean mixture, and diced bell pepper in a bowl.
- Top with avocado slices, cilantro, and lime juice.
- Serve warm.
