Description
A hearty and nutritious split pea soup made easily in your slow cooker. Packed with protein and fiber, it’s perfect for a healthy meal.
Ingredients
- 2 cups dried split peas
- 6 cups vegetable broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 bay leaf
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse the split peas under cold water and drain.
- Add all ingredients to the slow cooker.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the bay leaf before serving.
Notes
- Store leftovers in an airtight container for up to 4 days.
- Freeze for up to 3 months.
- For extra flavor, add a ham bone or diced ham.
