A quick and easy taco pasta salad perfect for busy weeknights or casual gatherings. Combines classic taco flavors with pasta for a satisfying dish.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/4 cup chopped cilantro
- 1 lime, juiced
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Brown ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning and water as directed on the packet. Simmer for 5 minutes.
- In a large bowl, combine cooked pasta, seasoned beef, tomatoes, olives, and cheese.
- Mix sour cream, salsa, lime juice, and cilantro in a small bowl.
- Pour dressing over the pasta mixture and toss to combine.
- Serve immediately or refrigerate for up to 2 hours before serving.

- Use ground turkey or chicken for a lighter option.
- Add diced avocado or jalapeños for extra flavor.
- Leftovers can be stored in the fridge for up to 2 days.
