A hearty and flavorful tortellini soup that’s easy to make and perfect for any occasion.
Ingredients
- 1 package (9 oz) cheese tortellini
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup chopped spinach
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cook until softened.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Add tortellini, cook according to package instructions.
- Stir in spinach, basil, salt, and pepper.
- Simmer for 5 minutes, then serve hot.
Notes
- You can use fresh or frozen tortellini.
- Add cooked chicken or sausage for extra protein.
- Store leftovers in the fridge for up to 3 days.
