Ingredients
- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup shredded cheese
- 1 cup sour cream
- 1 tbsp fajita seasoning
- 1 cup cooked rice
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Sauté bell pepper and onion in olive oil until soft.
- Mix chicken, vegetables, sour cream, and seasoning in a bowl.
- Layer rice in a baking dish, top with chicken mixture.
- Sprinkle cheese on top.
- Bake for 20 minutes until cheese melts.
