Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 packet taco seasoning
- 1/2 cup chicken broth
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix shredded chicken, rice, black beans, diced tomatoes, corn, sour cream, and taco seasoning.
- Add chicken broth and stir until well combined.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle shredded cheddar cheese evenly on top.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
