Ingredients
- 1 ½ cups gluten-free flour blend
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground cloves
- ½ tsp ground ginger
- 1 cup pumpkin puree
- ½ cup brown sugar
- ¼ cup maple syrup
- 2 eggs
- ⅓ cup melted coconut oil
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, whisk together gluten-free flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In another bowl, mix pumpkin puree, brown sugar, maple syrup, eggs, coconut oil, and vanilla extract.
- Combine wet and dry ingredients. Stir until just mixed.
- Spoon batter into muffin liners, filling each ⅔ full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Use fresh pumpkin puree for best results.
- Check muffins at 20 minutes to avoid overbaking.
