Description
A quick and creamy tomato soup made in just 20 minutes using a blender for a smooth texture.
Ingredients
- 4 large tomatoes, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add tomatoes, salt, pepper, and basil. Cook for 5 minutes.
- Pour in vegetable broth and simmer for 10 minutes.
- Transfer the mixture to a blender and blend until smooth.
- Return to the pot, stir in heavy cream, and heat for 2 minutes.
- Serve hot.
Notes
- Use fresh tomatoes for the best flavor.
- Adjust salt and pepper to taste.
- For a vegan version, replace heavy cream with coconut milk.
