Description
A simple and healthy tomato white bean soup made with just 5 ingredients.
Ingredients
- 2 cups canned white beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 small onion, chopped
- 1 tsp dried oregano
Instructions
- Heat a pot over medium heat.
- Add chopped onion and sauté until soft.
- Stir in diced tomatoes, white beans, vegetable broth, and oregano.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Blend half the soup for a creamier texture if desired.
- Serve hot.

- Store leftovers in an airtight container for up to 3 days.
- Add a pinch of red pepper flakes for extra heat.
