Description
A quick and healthy air fryer recipe featuring juicy chicken glazed with sweet and tangy pineapple teriyaki sauce.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 lb)
- 1/2 cup pineapple juice
- 3 tbsp low-sodium teriyaki sauce
- 1 tbsp honey
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp cornstarch (for thickening)
- 1 tbsp water (for cornstarch slurry)
- 1/4 cup diced pineapple (fresh or canned)
- 1 tbsp chopped green onions (for garnish)
- 1 tsp sesame seeds (for garnish)
Instructions
- In a bowl, whisk pineapple juice, teriyaki sauce, honey, garlic, ginger, and red pepper flakes.
- Pour half the marinade over chicken and let it marinate for 15 minutes.
- Preheat air fryer to 375°F (190°C).
- Place chicken in air fryer basket and cook for 12-15 minutes, flipping halfway.
- While chicken cooks, heat remaining marinade in a saucepan. Mix cornstarch and water, then stir into sauce until thickened.
- Add diced pineapple to the sauce.
- Brush cooked chicken with glaze and air fry for 1-2 more minutes.
- Garnish with green onions and sesame seeds before serving.
Notes
- Slice chicken evenly for even cooking.
- Adjust spice level by reducing or omitting red pepper flakes.
- For crispier chicken, lightly spray with oil before air frying.
- Serve over rice or with steamed vegetables.
