A quick and healthy air fryer recipe featuring juicy chicken glazed with sweet and tangy pineapple teriyaki sauce.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup pineapple juice
  • 3 tbsp low-sodium teriyaki sauce
  • 1 tbsp honey
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp cornstarch (for thickening)
  • 1 tbsp water (for cornstarch slurry)
  • 1/4 cup diced pineapple (fresh or canned)
  • 1 tbsp chopped green onions (for garnish)
  • 1 tsp sesame seeds (for garnish)


Instructions

  1. In a bowl, whisk pineapple juice, teriyaki sauce, honey, garlic, ginger, and red pepper flakes.
  2. Pour half the marinade over chicken and let it marinate for 15 minutes.
  3. Preheat air fryer to 375°F (190°C).
  4. Place chicken in air fryer basket and cook for 12-15 minutes, flipping halfway.
  5. While chicken cooks, heat remaining marinade in a saucepan. Mix cornstarch and water, then stir into sauce until thickened.
  6. Add diced pineapple to the sauce.
  7. Brush cooked chicken with glaze and air fry for 1-2 more minutes.
  8. Garnish with green onions and sesame seeds before serving.
