Description

A healthy twist on the classic pork schnitzel, made in the air fryer for a crispy exterior and tender inside with less oil.


Ingredients

  • 2 boneless pork chops (about 1/2 inch thick)
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 1 tablespoon Dijon mustard
  • 1 tablespoon water


Instructions

  1. Preheat air fryer to 400°F (200°C) for 5 minutes.
  2. Pound pork chops to 1/4 inch thickness between plastic wrap.
  3. In a shallow bowl, mix breadcrumbs, Parmesan, paprika, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, whisk egg, mustard, and water.
  5. Dip each pork chop in egg mixture, then coat with breadcrumb mixture.
  6. Place in air fryer basket in single layer.
  7. Cook for 8 minutes, flip, then cook another 4-6 minutes until golden and internal temperature reaches 145°F (63°C).
  8. Let rest 3 minutes before serving.

Notes

  • For extra crispiness, lightly spray with olive oil before cooking.
  • Use gluten-free breadcrumbs if needed.
  • Double coating gives thicker crust – dip in egg and crumbs twice.
  • Serve with lemon wedges for brightness.
