Description
A healthy twist on the classic pork schnitzel, made in the air fryer for a crispy exterior and tender inside with less oil.
Ingredients
- 2 boneless pork chops (about 1/2 inch thick)
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1 tablespoon Dijon mustard
- 1 tablespoon water
Instructions
- Preheat air fryer to 400°F (200°C) for 5 minutes.
- Pound pork chops to 1/4 inch thickness between plastic wrap.
- In a shallow bowl, mix breadcrumbs, Parmesan, paprika, garlic powder, onion powder, salt, and pepper.
- In another bowl, whisk egg, mustard, and water.
- Dip each pork chop in egg mixture, then coat with breadcrumb mixture.
- Place in air fryer basket in single layer.
- Cook for 8 minutes, flip, then cook another 4-6 minutes until golden and internal temperature reaches 145°F (63°C).
- Let rest 3 minutes before serving.
Notes
- For extra crispiness, lightly spray with olive oil before cooking.
- Use gluten-free breadcrumbs if needed.
- Double coating gives thicker crust – dip in egg and crumbs twice.
- Serve with lemon wedges for brightness.
