Description
A simple and healthy recipe for stuffed bell peppers cooked in an air fryer. Packed with protein and vegetables, this dish is quick to prepare and full of flavor.
Ingredients
- 4 large bell peppers (any color)
- 1 lb ground turkey or chicken
- 1 cup cooked quinoa
- 1/2 cup diced onion
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix ground turkey, cooked quinoa, onion, tomatoes, garlic powder, paprika, salt, and pepper.
- Stuff each pepper with the mixture.
- Preheat the air fryer to 375°F (190°C).
- Place peppers in the air fryer basket and cook for 15-18 minutes.
- If using cheese, sprinkle on top and cook for an additional 2 minutes.
- Serve hot.
Notes
- Use any color of bell peppers for variety.
- For a vegetarian option, replace meat with lentils or tofu.
