A healthier twist on classic lasagna with Alfredo sauce, chicken, and vegetables.
Ingredients
- 9 lasagna noodles
- 2 cups cooked chicken, shredded
- 1 cup Alfredo sauce
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 cup spinach, chopped
- 1 zucchini, sliced
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions.
- Mix ricotta cheese with garlic powder, Italian seasoning, salt, and pepper.
- Layer noodles, ricotta mixture, chicken, Alfredo sauce, spinach, zucchini, and mozzarella cheese in a baking dish.
- Repeat layers until all ingredients are used.
- Bake for 25 minutes or until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
- Use whole wheat noodles for extra fiber.
- Add mushrooms or bell peppers for more vegetables.
- Store leftovers in an airtight container for up to 3 days.
