Description
A healthy twist on traditional Christmas cookies, made with almonds and natural sweeteners.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup maple syrup
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chopped almonds
Instructions
- Preheat oven to 350°F (175°C).
- Mix almond flour, coconut flour, cinnamon, and salt in a bowl.
- Add maple syrup, melted coconut oil, and vanilla extract. Stir until combined.
- Fold in chopped almonds.
- Roll dough into small balls and place on a baking sheet lined with parchment paper.
- Flatten slightly with a fork.
- Bake for 12-15 minutes until edges are golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- For a nut-free version, replace almond flour with oat flour.
- Add dark chocolate chips for extra flavor.
