Description

A moist and flavorful pumpkin bread made with almond flour for a healthy twist.


Ingredients

  • 2 cups almond flour
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a loaf pan or line with parchment paper.
  3. In a bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk eggs, pumpkin puree, maple syrup, and vanilla extract.
  5. Combine wet and dry ingredients. Fold in walnuts if using.
  6. Pour batter into the loaf pan and smooth the top.
  7. Bake for 35-40 minutes or until a toothpick comes out clean.
  8. Cool before slicing.

Notes

  • Store in an airtight container for up to 5 days.
  • Freeze slices for longer storage.
  • Adjust sweetness by adding more or less maple syrup.
