Description
A moist and flavorful pumpkin bread made with almond flour for a healthy twist.
Ingredients
- 2 cups almond flour
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 2 eggs
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Grease a loaf pan or line with parchment paper.
- In a bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk eggs, pumpkin puree, maple syrup, and vanilla extract.
- Combine wet and dry ingredients. Fold in walnuts if using.
- Pour batter into the loaf pan and smooth the top.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
- Store in an airtight container for up to 5 days.
- Freeze slices for longer storage.
- Adjust sweetness by adding more or less maple syrup.
