Ingredients
- 2 cups cooked chicken, shredded
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup frozen peas
- 1 cup diced onions
- 1 cup low-fat cheddar cheese, shredded
- 1 cup low-sodium chicken broth
- 1/2 cup plain Greek yogurt
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, potatoes, carrots, peas, and onions.
- In a separate bowl, whisk chicken broth, Greek yogurt, thyme, garlic powder, black pepper, and salt.
- Pour the sauce over the chicken and vegetable mixture.
- Transfer to a greased casserole dish.
- Sprinkle shredded cheese on top.
- Bake for 35-40 minutes until bubbly and golden.
- Let rest for 5 minutes before serving.
