Description

A warm and nutritious soup made with fresh asparagus and peas, perfect for winter.


Ingredients

  • 2 cups fresh asparagus, chopped
  • 1 cup fresh or frozen peas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 cup plain yogurt (optional)


Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.
  2. Add chopped asparagus, peas, salt, pepper, and thyme. Cook for 5 minutes.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Stir in yogurt if desired. Serve warm.

Notes

  • For a creamier texture, add a splash of coconut milk.
