Description

A quick and healthy creamy tortilla soup with avocado and lime flavors.


Ingredients

  • 2 ripe avocados
  • 1 lime, juiced
  • 4 cups vegetable broth
  • 1 cup corn kernels
  • 1 cup black beans
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • 1 cup tortilla chips
  • 1/4 cup cilantro, chopped


Instructions

  1. Heat a pot over medium heat. Add diced onion and minced garlic. Cook until soft.
  2. Add vegetable broth, corn, black beans, cumin, and chili powder. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. Blend avocados with lime juice until smooth.
