Description
A quick and healthy creamy tortilla soup with avocado and lime flavors.
Ingredients
- 2 ripe avocados
- 1 lime, juiced
- 4 cups vegetable broth
- 1 cup corn kernels
- 1 cup black beans
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
- 1 cup tortilla chips
- 1/4 cup cilantro, chopped
Instructions
- Heat a pot over medium heat. Add diced onion and minced garlic. Cook until soft.
- Add vegetable broth, corn, black beans, cumin, and chili powder. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Blend avocados with lime juice until smooth.
- Stir avocado mixture into the soup. Cook for 5 more minutes.
- Serve topped with tortilla chips and cilantro.
