Ingredients
- 6 slices bacon, diced
- 3 medium potatoes, peeled and cubed
- 8 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 2 green onions, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Cook bacon in a skillet until crispy. Remove and drain on paper towels.
- In the same skillet, sauté potatoes until tender, about 10 minutes.
- Whisk eggs, milk, salt, and pepper in a bowl.
- Layer potatoes, bacon, and cheese in a greased baking dish.
- Pour egg mixture over the top.
- Bake for 25-30 minutes or until eggs are set.
- Garnish with green onions before serving.
