Ingredients
- 1 lb ground turkey
- 1 cup brown rice, cooked
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup shredded cheese
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 6 whole wheat tortillas
- 1 cup salsa
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a pan and sauté onion and bell pepper until soft.
- Add ground turkey and cook until browned.
- Stir in black beans, corn, cooked rice, cumin, chili powder, salt, and pepper.
- Spread a thin layer of salsa in a baking dish.
- Layer tortillas, turkey mixture, and cheese in the dish.
- Repeat layers, ending with cheese on top.
- Bake for 20 minutes or until cheese is melted and bubbly.
Notes
- Use lean ground turkey for a healthier option.
- Swap brown rice for quinoa if preferred.
- Add jalapeños for extra spice.
