Ingredients

  • 1 lb ground turkey
  • 1 cup brown rice, cooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 cup shredded cheese
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 6 whole wheat tortillas
  • 1 cup salsa


Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a pan and sauté onion and bell pepper until soft.
  3. Add ground turkey and cook until browned.
  4. Stir in black beans, corn, cooked rice, cumin, chili powder, salt, and pepper.
  5. Spread a thin layer of salsa in a baking dish.
  6. Layer tortillas, turkey mixture, and cheese in the dish.
  7. Repeat layers, ending with cheese on top.
  8. Bake for 20 minutes or until cheese is melted and bubbly.
