Ingredients
- 2 medium sweet potatoes
- 1 ripe avocado
- 1 lime
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dry sweet potatoes. Pierce them with a fork.
- Rub sweet potatoes with olive oil and sprinkle with salt.
- Place sweet potatoes on a baking sheet and bake for 45-50 minutes until tender.
- Cut the avocado in half, remove the pit, and slice.
- Squeeze lime juice over the avocado slices.
- Split the baked sweet potatoes open and top with avocado slices.
- Season with salt and black pepper to taste.
