Ingredients

  • 4 large Vidalia onions
  • 1 cup cooked quinoa
  • 1/2 cup diced mushrooms
  • 1/4 cup chopped spinach
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the onions and hollow out the centers, leaving a 1/2-inch shell.
  3. Heat olive oil in a pan and sauté garlic, mushrooms, and spinach for 3 minutes.
  4. Mix the sautéed vegetables with quinoa, Parmesan, thyme, salt, and pepper.
  5. Stuff the onions with the mixture and place them in a baking dish.
  6. Bake for 30-35 minutes until the onions are tender.
  7. Serve warm.
