Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup BBQ sauce
- 1 cup cooked brown rice
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 avocado, sliced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or skillet to medium-high heat.
- Season chicken with salt and pepper, then brush with BBQ sauce.
- Grill chicken for 6-7 minutes per side until cooked through.
- Slice chicken into strips.
- Assemble bowls with rice, black beans, corn, red onion, avocado, and chicken.
- Drizzle with additional BBQ sauce if desired.
