Description
A hearty and nutritious soup made with beans and ham hock, perfect for a healthy meal.
Ingredients
- 1 lb dried white beans
- 1 ham hock
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 bay leaf
- 1 tsp black pepper
- 1 tsp dried thyme
- Salt to taste
Instructions
- Rinse the beans and soak them overnight in water.
- Drain the beans and set aside.
- In a large pot, sauté onion, carrots, celery, and garlic until softened.
- Add the ham hock, beans, chicken broth, bay leaf, black pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 2 hours or until beans are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Season with salt to taste and serve hot.

- Soaking the beans reduces cooking time.
- Use low-sodium broth to control salt intake.
- Remove excess fat from the ham hock before shredding.
