Ingredients

  • 1 lb dried white beans
  • 1 ham hock
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • Salt to taste


Instructions

  1. Rinse the beans and soak them overnight in water.
  2. Drain the beans and set aside.
  3. In a large pot, sauté onion, carrots, celery, and garlic until softened.
  4. Add the ham hock, beans, chicken broth, bay leaf, black pepper, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 2 hours or until beans are tender.
  6. Remove the ham hock, shred the meat, and return it to the pot.
  7. Season with salt to taste and serve hot.
