A simple, healthy dump-and-cook crockpot recipe that saves time without sacrificing flavor.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 cup low-sodium chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes, undrained
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add black beans, corn, diced tomatoes, bell pepper, onion, and garlic.
- Pour chicken broth over the ingredients.
- Sprinkle cumin, chili powder, salt, and black pepper evenly.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken with forks before serving.
Notes
- Swap chicken for turkey or tofu if preferred.
- Add extra vegetables like zucchini or carrots for more nutrients.
- Store leftovers in an airtight container for up to 3 days.
