Description
A simple and healthy homemade potato soup that’s creamy and comforting.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (or almond milk for dairy-free)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, cook until soft.
- Add potatoes, broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend half the soup until smooth, then return to the pot.
- Stir in milk and heat through.
- Serve hot.
Notes
- For extra creaminess, add a spoonful of Greek yogurt.
- Top with fresh herbs or grated cheese if desired.
- Store leftovers in the fridge for up to 3 days.
