Ingredients

  • 1 head radicchio, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup walnuts, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Wash and chop the radicchio, then place it in a large bowl.
  2. Add cherry tomatoes, cucumber, and red onion to the bowl.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
