Description
A fresh and healthy radicchio salad packed with nutrients and flavor. Perfect for a light lunch or side dish.
Ingredients
- 1 head radicchio, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup walnuts, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and chop the radicchio, then place it in a large bowl.
- Add cherry tomatoes, cucumber, and red onion to the bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle chopped walnuts on top before serving.
Notes
- For extra protein, add grilled chicken or chickpeas.
- Store leftovers in an airtight container for up to 2 days.
