Healthy birria tacos made with lean meat and fresh ingredients for a nutritious twist on the classic dish.
Ingredients
- 1 lb lean beef (shank or chuck)
- 2 cups low-sodium beef broth
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 dried guajillo chilies
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 bay leaf
- 8 corn tortillas
- 1 cup shredded cabbage
- 1 lime, cut into wedges
- Fresh cilantro, chopped
Instructions
- Trim excess fat from beef and cut into chunks.
- Heat broth in a pot over medium heat.
- Add beef, onion, garlic, chilies, cumin, oregano, and bay leaf.
- Simmer for 2 hours or until beef is tender.
- Remove chilies and blend with some broth to make a sauce.
- Shred the beef and mix with the sauce.
- Warm tortillas in a skillet.
- Fill tortillas with beef, cabbage, and cilantro.
- Serve with lime wedges.
