Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or canned)
  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. In a large bowl, combine black beans, corn, red bell pepper, red onion, jalapeño, and cilantro.
  2. Add lime juice, cumin, salt, and black pepper.
  3. Stir well until all ingredients are evenly mixed.
  4. Cover and refrigerate for at least 30 minutes to let flavors meld.
