Ingredients
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or canned)
- 1 medium red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine black beans, corn, red bell pepper, red onion, jalapeño, and cilantro.
- Add lime juice, cumin, salt, and black pepper.
- Stir well until all ingredients are evenly mixed.
- Cover and refrigerate for at least 30 minutes to let flavors meld.
- Serve chilled with tortilla chips or fresh vegetables.
Notes
- For extra heat, leave the seeds in the jalapeño.
- This dip tastes best when made a few hours ahead.
