Description
A healthy twist on the classic BLT sandwich, using egg salad and lettuce wraps for a lighter meal.
Ingredients
- 4 large eggs
- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 2 tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- Salt and pepper to taste
- 4 large lettuce leaves
Instructions
- Boil eggs for 10 minutes, then cool and chop.
- Cook turkey bacon until crispy, then crumble.
- Mix eggs, bacon, tomatoes, yogurt, mustard, and lemon juice.
- Season with salt and pepper.
- Spoon mixture onto lettuce leaves and serve.
Notes
- Use romaine or butter lettuce for best results.
- Add avocado for extra creaminess.
