Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup honey
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mix oats, flour, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, whisk honey, applesauce, milk, egg, and vanilla.
  4. Combine wet and dry ingredients. Fold in blueberries.
  5. Divide batter evenly into muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
