Delicious and healthy blueberry oat muffins packed with fiber and antioxidants. Perfect for breakfast or a snack.
Ingredients
- 1 cup rolled oats
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup honey
- 1/2 cup unsweetened applesauce
- 1/4 cup milk
- 1 egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- Mix oats, flour, baking powder, baking soda, and salt in a bowl.
- In another bowl, whisk honey, applesauce, milk, egg, and vanilla.
- Combine wet and dry ingredients. Fold in blueberries.
- Divide batter evenly into muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Store in an airtight container for up to 3 days.
- Replace blueberries with other berries if preferred.
- Use maple syrup instead of honey for a vegan option.
