Ingredients
- 1 cup wheat bran
- 1 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup honey
- 1/4 cup vegetable oil
- 1 egg
- 1 cup plain yogurt
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- Mix wheat bran, flour, baking soda, and salt in a bowl.
- In another bowl, whisk honey, oil, egg, yogurt, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Fill muffin cups 3/4 full. Bake for 15-20 minutes.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Add raisins or nuts for extra flavor.
