Ingredients

  • 1 cup wheat bran
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup plain yogurt
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Mix wheat bran, flour, baking soda, and salt in a bowl.
  3. In another bowl, whisk honey, oil, egg, yogurt, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Fill muffin cups 3/4 full. Bake for 15-20 minutes.
  6. Let cool before serving.
