Ingredients

  • 3 cups diced potatoes
  • 6 large eggs
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1/2 cup diced onions
  • 1/2 cup shredded cheese
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté onions and bell peppers for 3 minutes.
  3. Add diced potatoes and cook until tender.
  4. Spread the potato mixture in a greased baking dish.
