Ingredients
- 3 cups diced potatoes
- 6 large eggs
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 1/2 cup diced onions
- 1/2 cup shredded cheese
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan and sauté onions and bell peppers for 3 minutes.
- Add diced potatoes and cook until tender.
- Spread the potato mixture in a greased baking dish.
- Whisk eggs with salt and pepper, then pour over the potatoes.
- Sprinkle chopped spinach and shredded cheese on top.
- Bake for 25-30 minutes or until eggs are set.
- Let cool for 5 minutes before serving.
