Ingredients

  • 2 medium potatoes, diced
  • 2 cups kale, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 4 eggs (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced potatoes and cook for 10 minutes, stirring occasionally.
  3. Add onion and garlic, cook for 3 minutes until softened.
  4. Stir in kale, salt, pepper, and paprika. Cook for 5 minutes until kale wilts.
  5. Create small wells in the mixture and crack eggs into them if using.
  6. Cover and cook for 5 minutes until eggs are set to your liking.
  7. Serve hot.

Notes

  • For a vegan version, skip the eggs.
  • Add other veggies like bell peppers if desired.
