Ingredients
- 2 medium potatoes, diced
- 2 cups kale, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 4 eggs (optional)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced potatoes and cook for 10 minutes, stirring occasionally.
- Add onion and garlic, cook for 3 minutes until softened.
- Stir in kale, salt, pepper, and paprika. Cook for 5 minutes until kale wilts.
- Create small wells in the mixture and crack eggs into them if using.
- Cover and cook for 5 minutes until eggs are set to your liking.
- Serve hot.
Notes
- For a vegan version, skip the eggs.
- Add other veggies like bell peppers if desired.
- Store leftovers in an airtight container for up to 2 days.
