Ingredients
- 2 cups grated potatoes
- 1/4 cup grated onion
- 1 egg
- 2 tbsp whole wheat flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1/2 cup apple butter
Instructions
- Combine grated potatoes, onion, egg, flour, salt, and pepper in a bowl.
- Heat olive oil in a skillet over medium heat.
- Scoop 1/4 cup of the potato mixture and flatten into a pancake shape.
- Cook for 3-4 minutes per side until golden brown.
- Repeat with remaining mixture.
- Serve warm with apple butter.
