Ingredients
- 2 large potatoes
- 1 tbsp olive oil
- 1/4 cup chopped bell peppers
- 1/4 cup diced onions
- 2 eggs
- 1/4 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the potatoes in half and scoop out the flesh, leaving a thin layer inside the skins.
- Brush the potato skins with olive oil and bake for 10 minutes until slightly crispy.
- Sauté the bell peppers and onions until soft.
- Crack an egg into each potato skin, then top with the sautéed vegetables and cheese.
- Bake for another 15 minutes or until the eggs are set.
- Season with salt and pepper before serving.

- Use sweet potatoes for a sweeter variation.
- Add cooked bacon or ham for extra protein.
