A nutritious breakfast casserole packed with protein and greens.
Ingredients
- 8 eggs
- 1 cup milk
- 1 lb breakfast sausage
- 2 cups fresh spinach
- 1 cup shredded cheese
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F
- Brown sausage in a skillet
- Whisk eggs and milk together
- Layer spinach in baking dish
- Add cooked sausage
- Pour egg mixture over top
- Sprinkle with cheese
- Bake for 30 minutes
Notes
- Can substitute turkey sausage
- Add mushrooms if desired
- Let cool 5 minutes before serving
