Description
A healthy twist on classic butter chicken made in a crockpot for easy cooking.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 cup plain Greek yogurt
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 tbsp garam masala
- 1 tsp turmeric
- 1 tsp paprika
- 1 can (14 oz) diced tomatoes
- 1/2 cup low-fat coconut milk
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Mix chicken with yogurt, garam masala, turmeric, and paprika. Let marinate for 30 minutes.
- Heat olive oil in a pan. Sauté onion, garlic, and ginger until soft.
- Add marinated chicken and cook for 5 minutes.
- Transfer everything to the crockpot. Add diced tomatoes, coconut milk, and lemon juice.
- Cook on low for 6 hours or high for 3 hours.
- Garnish with fresh cilantro before serving.
Notes
- Use full-fat coconut milk for a creamier texture.
- Adjust spices to your preference.
- Serve with brown rice or cauliflower rice for a healthier option.
