Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup low-fat coconut milk
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Mix chicken with yogurt, garam masala, turmeric, and paprika. Let marinate for 30 minutes.
  2. Heat olive oil in a pan. Sauté onion, garlic, and ginger until soft.
  3. Add marinated chicken and cook for 5 minutes.
  4. Transfer everything to the crockpot. Add diced tomatoes, coconut milk, and lemon juice.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Garnish with fresh cilantro before serving.
